Well.....I cooked today and just discovered the new thread, Trish.

Roasted pork loin, fresh carrots, corn on the cob and fresh picked from a local garden, a huge head of cabbage......with homemade southern corn bread and butter.

That was a wonderful dinner....and I will not have to cook tomorrow.

Zucchini and yellow squash with onion, garlic and olive oil. Pork tenderloin sliced into silver dollar sized pieces and drenched in Italian bread crumbs and lightly cooked in the leftover pan from the zucchini and onions.

Just before taking all this off the stove, grinding some fresh parmesean cheese over the meat until it melts slightly and adding some parsley to the mix.

Pasta tossed with sauce made this summer from my home grown tomatoes, onion, basil, parsley and garlic.

A glass of merlot or two.

For later, chilled carrot cake with cream cheese frosting.

I hope he enjoys it all.

If not, my dogs are in for a treat.

^^^ You've found me out, but I did post once, that I rarely post an original KatfishHunter photo.

The ribs I made were much more crispity crunchity than these pictured.

Long gone are the days of hgwy 101 roadside stands selling whatever it was they sold.

However, the lady down the hill, still puts out honey. So, once again, breakfast was biscuits and honey, slathered with butter.

made a pot of chicken soup for what ails me.
had some chicken broth in freezer from the last soup but not enough, so I added water and a packet of Lipton onion soup mix.. WOW what a good flavor!

didnt have any mixed veggies that I would normally add, so put some chopped onion, celery, corn, garlic , basil and of course cubed chicken.

must say it was MIGHTY good!

I took some chicken out of the freezer last night, but as of now it still sits in the refrigerator.

Will make the soup on Sunday.

If you ever lived on a farm, you might remember Sunday suppers. The whole family, sometimes including neighbors and relatives, sitting down in the early afternoon. Usually ham, roast beef and chicken of course, three vegetables, aunt Jenny's rolls, never empty bowl of potatoes, gravy from each meat and at least two desserts "made from scratch". Homogenized or Pasteurized milk? Sure, if that's what Bessie gave that day. Everyone was filled with a warm fuzzy feeling and five extra pounds, after.

Today, my only fuzz, will be on the bread that went moldy. It's not easy cooking for just one.

Any sympathy? Any hot older babe want to adopt me? I clean up well.

Tonight, I'll probably cook a New York steak.

I have two containers of biscuits.

That's good, then I won't have to eat all of it by myself.

I have eggs on to hard boil.

Will make some egg salad and deviled eggs.

I'll save a couple to slice and throw on a salad.

If I get ambitious enough I'll make the sausage gravy.

Leftover hamburger surprise, which turned out to be real down home cooking bachelor fare.

Crumbled browned burger, can of your favorite Campbells soup, can of veggies, dump in some tater tots. Eat right out of the pan. Pan goes in refrigerator, if there are leftovers, spoon too.

Leftovers from my sumptuous Valentine meal for one, frozen pizza piled high with extra added goodness.

I cook it on top of the stove in a covered cast iron skillet. I'm not the best cook, and have acquired a taste for all things crispity crunchy. The crust is just that.

Thawed first, with about 1/3 cup of water in bottom of pan, on low heat, about 20 minutes, the longer the crunchier.

Happy pizza-ing.

so the pizza goes in the water and youre basically steaming it? How does it get crunchy, wait for water to cook off then its starts crisping?

^^^^ No, not steaming. The water is there to keep it from burning and will soak in to the pizza.
